The Kershaw 7–in. Fillet is perfect for filleting medium-to-larger fish with ease. The blade is made of Japanese 420J2 stainless steel with just the right degree of flex to make the job of filleting simple. This “softer” steel enables the blade to bend without breaking so that it moves easily through the body of the fish to give you the ideal fillet. Plus, the steel is highly corrosion resistant—always important when you're working around water.

The handle is injection-molded for durability and contoured for filleting comfort. Neon highlights in the handle make it easy to spot in a marine environment—while still looking good with a basic black handle. The co-polymer handle material provides an excellent grip and its soft-yet-firm texture makes the job of filleting even a large catch less fatiguing. The design of the handle, with its central contour and hand protectors at both ends fit the hand and helps it lock in for an extra-comfortable grip.

Buy a rapala
Price is fantastic and flexibility is about right for the size of freshwater fish I regularly clean. This is the only knife I have ever owned which actually makes life hard when I try to sharpen it. Sucker does not want to be sharp and loses its edge quickly to boot. Buy a rapala, it's only 10 bucks more for a much better knife.

Excellent Fish Fillet Knife
I have been using my Kershaw 1257 fillet knife for two years with great results. The knife came razor sharp and has only needed to be sharpened once. The knife has always been rust free. A few strokes on a 600 grit and 1000 grit stonebrought the blade back to new. Kershaw makes quality knives.I am mostly a trout fly fisherman with keepers (i.e. eaters) ranging between two and five pounds. Cleaning and preparing is easy. Larger saltwater fish like a 20 pound striper are at the high end of where I would use this knife.
