The KC-950 series of kitchen knives from Kanetsune feature a DSR-1K6 high carbon stainless steel blade with a "Tsuchime" hammered finish. This finish allows food to be easily released and cleaned from the blade. The handles are made from plywood with black plastic bolsters. These handles greatly reduce the weight of the knives and look great despite the materials. A Ko-Deba is a small traditional knife used to cut and fillet fish, although it can be used for other meats as well.
