Pros: Sharpness, Design, Construction
An amazing piece of art!
Beautiful. Perfectly balanced. Razor sharp blade. (It seems to be even sharper than the ceramic knife I have.) How well the VG-10 core holds up still needs to be seen. The knife came with a relative narrow edge - I estimate 10-15 degree total (5-7.5 degree per side.) Not sure how well sharpness can be maintained in the long term by honing the knife. It's not your typical "work horse" knife, such as a German 0r US made blade of X50CroMoV15, but it is the perfect choice when you need an extra sharp edge for cutting soft items, i.e. ripe tomatoes or sashimi grade seafood.
