Excellent everyday kitchen knife

I was looking for a step up from my Victorinox chef knife, which is cheap, but surprisingly good. This Shun Sora is a much better knife. For about eighty bucks you get VG10 steel sandwiched between layers of stainless. The grooves in the side of the blade help release the food that you're cutting, so it all falls away to the sides. The knife arrived almost razor sharp. I'll probably buy some kind of finishing strop to hone the edge better than my electric sharpener can get it. Good weight and balance; almost immediately it felt like I had the blade under much better control than my other chef knife. There are harder, more durable steels than VG10, so professional chefs may opt for more expensive knives. For home use, this is just about perfect. Very sharp, holds its edge, easy to clean. I'll give it 4 of 5 stars, figuring the more expensive knives are even better.
